Secret Sauce: The Story of One of Mesquite’s Most Popular Pizza Places

If you haven’t heard of Cheese’s Pizza, Pasta and Wings, then you don’t know what you’re missing out on. Not only do they have some of the best pizza and pasta in Mesquite, but the owner’s story makes us love them.

Cooking up a strong family

The owners of Cheese’s Pizza, Maria “ Lala” and Victor Gutierrez hail from Mexico. Both have lived in America for 30 years. In 2005 the couple and their seven children moved to Mesquite for quality schools and sports activities. All seven children attended Mesquite schools and five are now college graduates. Victor is the head chef at Cheese’s. Previously, he worked in several Italian restaurants throughout the Dallas-Fort Worth area, including Lombardi’s and Scuro. He started at 17 at Lombardi’s as a dishwasher and worked his way up to become the e xecutive chef . Victor has cooked for several high-end clients, including former President George W. Bush while still Governor of Texas, Martina Navratilova, former professional tennis player and coach, and Ross Perot, a former U.S. Presidential Candidate.

The Business

In 2008, the family opened Cheese’s at 1925 Towne Centre Drive, the first business to open in that retail center. One of the reasons they decided to open up shop here was because they knew that Mesquite was very business-friendly. According to Lala, the first five years of the business were difficult, but over time, other businesses moved in, helping to grow the retail center. They report having loyal customers that have eaten there since they were children and are now bringing in their children.

The Process

At Cheese's Pizza, Pasta and Wings, all the pizza and pasta are made fresh and cooked to order. Every day the dough is made in-house for their hand-tossed pizzas, as well as their pasta. Nothing is ever frozen. Even the sauce is made on the spot when you order your meal. They pride themselves on homemade, old-fashioned, fresh-made meals.

The Method

Hungry yet? Good! The local favorite from Cheese’s will always be the Fettuccini Alfredo with either chicken or shrimp or both! The Spaghetti and Meatballs is also a classic dish that is sure to please. If you prefer pizza to pasta, their Margherita Pizza is bursting with flavor, as is the Chicken Alfredo Pizza. All of the food is excellently priced and offers large portions. They are open for lunch or dinner and also offer pickup-and-go foods like subs and melts.
